Weller 10967. – Gegenüber der ersten Ausgabe von 1866 erweiterte Ausgabe des berühmten Werkes, in dem Pasteur zum ersten Mal die sog. „Pasteurisierung“ einer breiten Öffentlichkeit vorstellt. – „Pour détruire toute vitalité dans les germes des parasites du vin, il suffit de porter le vin pendant quelques instants à une température de 50 à 60°. J’ai reconnu, en outre, que le vin n’était jamais altéré par cette opération préalable“ (p. 133). – „French winemakers, troubled by the souring of wine, presented their problem to Pasteur. He found that wine diseases could be controlled by heating the liquid for a definite time at a certain temperature“ (Sparrow). – „(F)urther experiments … demonstrated beyond dispute that fermentation is caused by the action of minute living organisms and that if these are excluded or killed fermentation does not occur. This enabled him to explain to brewers and vintners the cause and prevention of sourness in their products. The heating process that he recommended was the earliest form of ’pasteurization“ (PMM 336). – „Although Pasteur’s method of preserving wine by partial heat sterilization (″pasteurization“) turned out to be a revival of Appert’s invention, Pasteur did rescue the method from oblivion and established on the basis of rigorous scientific experiments what had been only a poorly tested and entirely empirical technique“ (Garrison & Morton). – L. Pasteur (1822-1895) hat bereits 1857 seine „Mémoire sur la fermentation appelée lactique“ veröffentlicht und damit die moderne Bakteriologie begründet. – Beiliegt: Faksimile eines Briefs von L. Pasteur an seinen Sohn vom 20. August 1885. – Rücken etwas aufgehellt u. geringf. berieben, nur vereinzelt leicht fleckig, sehr gutes dekorativ gebundenes Exemplar.
